Creamy Chia Coconut Pudding

A quick, comforting, and filling breakfast or afternoon snack.  Rich with protein and healthy medium chain fatty acids from coconut.  On our autumn Living on Purpose retreats, we enjoy this as an early-morning break-fast after outdoor yoga, which helped to satisfy everyone until our leisurely late-morning brunch.  Enjoy!

  • 3/4 cup chia seeds
  • 2 cans whole coconut milk, in the can
  • 1 Tbsp vanilla extract
  • 1 tsp ground cinnamon
  • ½-1 tsp sea salt
  • Optional: 10 stevia liquid drops (an herbal sweetener)
  • Optional toppings. On retreat we used ground flaxseed, slivered almonds, and sliced bananas.

Put all ingredients except Chia seeds in large pitcher or mixing bowl and whisk thoroughly to blend well. Pour mixture into 2nd mixing bowl with Chia seed and immediately begin whisking to blend well. Cover and refrigerator overnight. Add optional toppings only when serving.
