Sesame Kale and Lentils

A hearty and flavorful vegetarian main dish or side dish (particularly delicious with a white flaky fish).  Excellent alongside a salad or some fresh fruit for a light dinner.

  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp toasted sesame oil
  • 1 large onion, peeled and finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup sesame seeds
  • About 3/4 lb fresh kale (10-12 oz), preferably lacinto, toughest stem ends removed (typically 2 inches) and then coarsely chopped
  • 1.5 cups cooked black lentils (if canned, rinse well)
  • Unrefined seasalt to taste

Heat combined oils in a large saucepan on medium heat.  Add onion and garlic and saute about 5 minutes, until just tender, about 80% cooked.  Add kale and ‘tame’ into the pan to coat all bits with oil.  Once volume is reduced, sprinkle with sesame seeds, blend well, and continue to saute, mixing around to allow all pieces to cook evenly, until kale is tender but still a bit chewy.  Add lentils and stir well just to warm (1-2 minutes).  Add seasalt to taste.   These flavors will deepen and become richer after refrigerating overnight or longer.
